Yowza these cookies were good. And easy. They might just be the best little Valentine’s treat.
You all know how much I love cookies; I’ve confessed it many times. Cake mix cookies are my newest love. They take no time at all to make and require minimal ingredients and equipment. They are perfect, perfect I tell ya, for RV baking. All you need is a bowl, spoon and a cookie sheet.
If you’re looking for a sweet Valentine’s treat for your someone special, these are IT.
Begin by melting 1/2 cup of butter. While that is melting, lightly beat one egg in a medium-sized mixing bowl.
Add the cake mix, butter and vanilla (or almond extract) and stir. Add one cup of white chocolate chips and stir.
I use a regular spoon to scoop some dough, roll into a ball and place on a parchment lined cookie sheet. I get 40 or so cookies per box of cake mix. If like my cookies on the smaller size so they are easy to pop into my mouth.
Bake 8-10 minutes then let sit on cookie sheet for 5-7 more minutes so they can finish cooking.
Red Velvet Cake Mix Cookies
- One Red Velvet Cake Mix
- 1/2 cup butter, melted
- 1 egg, beaten
- 1/2 teaspoon almond or vanilla extract
- 1 cup white chocolate chips
Melt butter in a microwave safe bowl. Stir in cake mix. Stir in beaten egg and extract. Add chocolate chips and stir.
Spoon and roll cookie dough into small balls, place on cookie sheet. Bake in a preheated 350 degree oven for 8-10 minutes. Remove from oven and let finish cooking on cookie sheet for 5-7 more minutes. .
Try not to eat them all in one sitting. Store in a tightly covered container.
