S’mores hold a special spot in my heart. We had them at every girl scout camp out and many times as a teenager hanging out at a friend’s house. Our family camping trips with our boys featured the yummy and messy treat at almost every campfire. I love seeing our boys’ messy smiles while eating them. S’mores always conjure up a smile.
We don’t have them much anymore. Many campgrounds don’t allow campfires and if it’s just the two of us, that giant bag of marshmallows is a diet disaster waiting to happen.
And still I longed for them. If only there was a way to make them without the campfire; and I don’t mean standing over the stove flame make them.
I needed graham crackers for a recipe and saw fancy new graham cracker sticks. Where were they when our boys were little! They are the perfect size for little kid hands. As I grabbed the graham crackers I needed, I stared at the box of graham sticks and wondered how I could use those cute little little sticks.
Then it hit me. A dessert dip. Those graham sticks were perfect! Pour a bunch of chocolate chips in a pie plate and top with marshmallows. Easy peasy.
First time was a complete failure. The pie plate was too big and the semi sweet chocolate chips were too rich. The pie plate cools off pretty fast which helps the chocolate get hard. It’s awful tough scooping out hard chocolate with a cute graham stick. Time to go back to the drawing board.
Enter my small cast iron. It’s smaller than a pie plate and definitely holds heat longer than one, too. We did a practice run and this time we only needed minor modifications. We used a bag of milk chocolate chips plus 1/2 cup of semi-sweet. That way we have the traditional milk chocolate flavor of a real s’more with a little semi-sweet chip richness. We had a winner!
Time for new guinea pigs, aka our friends. We were in California last weekend for a 60th birthday party and camped with our friends Ron & Terri. They were totally up for the job. It’s as easy to make in the RV as it is at home, I love it when that happens.
Preheat your oven to 450. The convection oven in the RV works well here and you can also use the traditional propane RV oven.
Pour a 12-ounce bag of milk chocolate chips into the cast iron. If you’d like more richness, stir in 1/2 cup semi-sweet chips.
Top with as many marshmallows as you’d like. You can use minis, regular sized or those new jumbo ones.
Bake 7-10 minutes or until the marshmallows are a nice golden brown.
Serve with those cute graham cracker sticks or regular graham crackers.
Cast Iron S’Mores
- 12-ounce bag milk chocolate chips
- 1/2 cup semi-sweet chocolate chips (optional)
- marshmallows
- graham crackers
Preheat oven to 450.
Pour chocolate chips into cast iron pan; top with marshmallows. Bake 7-10 minutes until marshmallows are golden brown. Serve immediately with graham crackers. Cover any leftovers and reheat in microwave.
