Yowza these cookies were good. And easy. They were like a Reese’s Peanut Butter Cup cookie!
Recently Mark’s cousin Keith and his wife came over for the weekend. They were getting all settled in and we were going to hang out in the pool a bit before dinner when Keith asked if I had any cookies. You know what, I didn’t! He laughed, saying he thought we always had cookies in the house. Well, that was all the incentive I needed to whip out a batch right then and there.
You all know how much I love cookies; I’ve confessed it many times. Cake mix cookies are so easy to love. They take no time at all to make and require minimal ingredients and equipment. They are perfect, perfect I tell ya, for RV baking. All you need is a bowl, spoon and a cookie sheet.
If you’re looking for an easy treat to satisfy your sweet tooth, cake mix cookies are perfect.
Begin by melting 1/2 cup of butter. While that is melting, lightly beat one egg in a medium-sized mixing bowl.
Add the cake mix, butter and vanilla (or almond extract) and stir. Then stir in one cup of peanut butter chips. The first time I made them I used one cup of peanut butter chips but it didn’t have the peanut butter cup taste we were going for. The next time I added another half cup and that did it. If you really want a big peanut butter punch, try two cups of chips.
I use a regular spoon to scoop some dough, roll into a ball and place on a parchment lined cookie sheet. I get 40 or so cookies per box of cake mix. If like my cookies on the smaller size so they are easy to pop into my mouth.
Bake 8-10 minutes then let sit on cookie sheet for 5-7 more minutes so they can finish cooking.
Peanut Butter Cup Cake Mix Cookies
- One box chocolate cake mix
- 1/2 cup butter, melted
- 1 egg, beaten
- 1/2 teaspoon almond or vanilla extract
- 1.5 cups peanut butter chips (2 cups if you want more peanut butter taste)
Melt butter in a microwave safe bowl. Stir in cake mix. Stir in beaten egg and extract. Add chocolate chips and stir.
Spoon and roll cookie dough into small balls, place on cookie sheet. Bake in a preheated 350 degree oven for 8-10 minutes. Remove from oven and let finish cooking on cookie sheet for 5-7 more minutes.
Try not to eat them all in one sitting. Store in a tightly covered container.
