I was scrolling through my Instagram feed recently and saw a delicious picture. Like, wow, I have to make this today because it looks so good kinda picture. Not less than an hour later I received a text from our dear friends inviting us over for a BBQ that Saturday. Fate I tell ya.
Today’s delicious recipe comes from Baker by Nature. I haven’t tried one of her recipes that I didn’t love. I could happily make just about everything in her Instagram feed.
Not only is this pasta salad pretty to look at with bits of pesto throughout and the bright tomatoes peeking out at you. It’s also really (REALLY) good. And, the best part of all, super easy to make either in at home or in your RV. I kid you not, the longest part was cutting the onion.
Put the water on to boil. While that’s happening, but the cherry tomatoes in half and dice the onion. Give yourself a round of applause because the hard part is done.
Drain the mozzarella balls and gaze lovingly at how good they look with tiny flecks of herbs on them.
Measure out a cup of pesto sauce. I like to make my own but I’m also hooked on Costco’s. It’s so handy to have.
When the water is ready, add the tortellini and cook for 1.5 minutes. Do not overcook!
Drain it and let it cool for a few minutes. You don’t want the glorious balls of mozzarella to melt.
Stir all ingredients in a large serving bowl. Time for another loving gaze at how good this looks.
I made this about 30 minutes before we left and kept it in their refrigerator until we were done floating in their amazing pool and were ready to eat. I gave it one last stir then we dug in. It was ah-mazing. Freaking amazing.
Pesto Tortellini Salad

Serves: 8 generous portions
- 1 20-ounce bag cheese tortellini
- 1 cup pesto
- 1.5 cups cherry tomatoes, cut in half
- 1 12-ounce container marinated mozzarella ball, drained
- 1/4 cup diced red onion
Bring a large pot of lightly salted water to a boil. Add tortellini and cook for 1/5 minutes. Do not overcook! Drain and rinse under cold water until cold. Place pasta in large bowl. Add remaining ingredients and stir well to coat everything.
Serve immediately or place in refrigerator until time to serve.
