Are you ready for one of the easiest desserts ever?! I’m talking two-ingredient easy. Two ingredients you might just have in the pantry right now. It’s been a favorite in our house for years and I predict it will become a favorite in your house, too.
You may be asking, is it really only two ingredients? Yes, yes it is. All you need is one box of Angel Food cake mix and one can of crushed pineapples in their own juice. The hardest part is waiting for the cake to cool!
Ready? Let’s bake!
Make sure your Angel Food cake mix is the “just add water” kind. It shouldn’t be hard to find, I think most of the mixes are that way now.
Preheat your oven to 350°. Empty the cake mix into a large bowl. You definitely want a big bowl so it’s easier to stir and because the mix grows a bit as you stir.
Open the pineapple can and pour the entire can into the bowl and gently stir until fully incorporated.
Pour mixture into a baking pan. I like to make this in a 13×9 pan but you can do two loaf pans or a tube pan. It looks so fluffy in the pan.
Follow bake times on the box for the pan you chose. I bake the 13×9 for 47 minutes or until the top is a pretty golden brown and is not sticky at all to the touch. If you’re using a tube pan, tip it over on a bottle as you would with a regular Angel Food cake. If you baked two loaf pans, turn them on their side on a wire rack. If you used a 13×9 pan like me, set the pan on a wire rack and let it completely cool.
My fabulous mother-in-law introduced this to us and boasted that it was a zero point Weight Watchers dessert. What I heard was, “you can eat as much of this as you want, Maureen.” I did a quick search of the point value for those that are counting and it’s actually four whole points. I also saw that the program has been updated and the new points are seven. I want to know what meanie decided that. I think four points still qualifies as “eat as much as you want,” don’t you?
You can top it with whipped cream and/or ice cream which sadly, ruins the whole low-calorie part. Or, you can enjoy slice after slice just as it is in all it’s goodness. Can you guess which way I eat it? No matter how you indulge, I predict this will rocket to the top of your favorite easy dessert list.
2-Ingredient Pineapple Angel Food Cake
- 1 16-ounce box Angel Food Cake, just add water kind
- 1 20-ounce can crushed pineapples in own juice
Preheat oven to 350°.
Stir cake mix and pineapples until well incorporated. Pour into your pan of choice and bake until top is a deep brown and not sticky. If using a 13×9 pan, bake for 47 minutes.
If using a tube pan, immediately turn pan upside down onto a glass bottle to cool. If using two loaf pans, lay them on their sides on a wire rack to cool. If using a 13×9 pan, place directly on wire rack to cool completely.
Tightly cover any leftovers.
