We’ve been on a snickerdoodle binge lately. Mark loves snickerdoodle cookies so much I keep cream of tartar in the RV!
All the wonderful parts of a snickerdoodle cookie are packed into each piece. These blondies take the “snick” to a whole other level. They are a snap to make, you’ll only dirty one bowl!
I know when the request for snickerdoodles is coming by the look in his eye. It usually happens when we’ve gotten back to camp but before dinner. He’ll lean back in his camp chair and tell me how good warm cookies would be with the ice cream in the freezer. Yes, I fall for it every time. I tricked him the last time, though. I made these instead. After he ate three of them I knew I had a winner.
Ready for great smells and great tastes? Let’s get baking!
Start by whisking the flour and baking powder together.
Stir together the cinnamon and sugar for the topping.
Use either your hand mixer or stand mixer to fully combine the butter, eggs, brown sugar and vanilla.
Add the flour mixture and mix on low until combined.
Spread into a greased 9×13 pan. The batter is thick, almost like cookie dough. As the maker, it’s your reward to lick the beaters if you’d like.
Top with the cinnamon/sugar mix and bake at 350° for 25-30 minutes until the center is set and springs back when touched. It’s 27 minutes in my oven. They will firm up as they cool.
You know I like my treats small so I don’t feel bad when I eat six. I get 24 blondies.
Snickerdoodle Blondies
Adapted from Six Sisters Stuff
- 2 2/3 cup flour
- 2 teaspoons baking powder
- 2 cups packed brown sugar
- 1 cup salted butter at room temperature
- 2 eggs
- 1 Tablespoon vanilla
- 2 Tablespoons sugar
- 2 teaspoons cinnamon
- Preheat oven to 350°.
- Whisk the flour and baking powder together. Stir together the cinnamon and sugar for the topping.
- Mix the butter, eggs, brown sugar and vanilla until fully combined.
- Add the flour mixture and beat on low until combined. Batter will be thick.
- Spread in greased 9×13 pan. Sprinkle cinnamon/sugar topping on top.
- Bake for 25-30 minutes until center is set and springs back when touched.
Store any leftovers in a sealed container. Don’t let me near them.
