Many of our trips involve big drive days home. Sharing a monster drive isn’t an issue.
Many times, we leave early, really early. We pack up and dump everything the night before. Then we make breakfast. Wait, what? You read that right. Sometimes we have cinnamon rolls. More times it’s something we make the night before. NOTE: We do this in the microconvection oven. We never did this in our RV propane oven.
Breakfast on the drive must be easy and not messy with an extra emphasis on not messy.
The key piece of equipment is a round silicone pan. The one that lives in the RV has to be 20 years old. I love it because it’s easy to clean, cools off quickly and, drumroll please, doesn’t slide around on the cooking rack while we are rolling down the road. That silicone really knows how to hug the rack and stay in place.
There’s been a lot of debate at the campsite about these. Everyone agrees that cut up bacon is delicious. We quickly settled on a croissant but not the size. We agreed on cut bacon with eggs and waged war on sausage. Mark was adamant that it had to be a sausage patty and I wanted the sausage cooked separately and combined with the egg. This led to some delicious and messy versions.
We did some old-fashioned experiments. We used full sized and smaller sized croissants. We tried bacon, crumbled sausage and a formed patty sausage. One trip we played in the RZR in southern Utah with Mark’s cousin Keith and his wife Linda. Just the four of us. Keith and I were firmly in the crumbled sausage camp while Mark and Linda were all about the sausage patty. We made them the night before we left and agreed to try each other’s for a winner. That didn’t work like I thought as nobody changed their position! The only thing that was settled was the full-sized croissant was too big.
Mark and I agreed to disagree on the sausage so now we each get what we want.
Let’s make a breakfast sandwich!
Start by slicing the croissant in half. Add a slice of cheese on the bottom half.
Cut the cooked bacon or cook your sausage. It’s your sandwich, you get to decide how you like your sausage cooked.
Cook your eggs. Mark likes his fried on an egg sandwich and I do too, at home. On the road it’s scrambled for me. If you’re scrambling, stir in cut bacon or crumbled sausage then put on top of cheese once cooked. If using a sausage patty, put cooked patty on top of cheese then top with your eggs. Put on the croissant top.
Wrap them in the foil and store in the refrigerator until ready to eat. Put the round rack in the microconvection oven, set temperature to 350 and preheat. Put the sandwiches in the round silicone pan. When the oven is ready, put the pan in and cook for 15-20 minutes depending on sandwich size. Unwrap and eat!
Lunches are pretty boring on long drive days, usually just a sandwich.

Breakfast Sandwiches
- Croissants, whichever size you like
- Eggs
- Bacon, cooked
- Sausage, cooked as patties or crumbled
- Sliced Cheese
- Preheat oven to 350°.
- Slice the croissants in half, laying them open on a piece of foil. Add the cheese slice.
- Scramble your eggs then add the bacon or sausage. OR Lay the bacon on top of the cheese and fry your eggs. OR Lay your patty on top of the cheese and top with scrambled or fried eggs. It’s your sandwich, your choice!
- Wrap the sandwich in foil and store in refrigerator until morning.
- Heat foil wrapped sandwiches in a silicone or other baking pan for 15-20 minutes depending on size.
