We have a good one for you today.
We’ve had an air fryer/toaster oven combo unit for several years. It mostly gets used for toast and reheating leftover restaurant french fries or onion rings. Our favorite thing to make until now has been avocado fries. We don’t take it with us because it’s bulky and the only place it can live on a drive is on the counter. We like a clean counter for travel.
Our daughter in law asked for an air fryer for her birthday which got me thinking. We have space for one to live in the RV so we can make avocado fries any time we want plus much more. Lucky me, I found one on a daily deal on Amazon!
We eat a lot of chicken and prefer boneless thighs. They are easy to work with, delicious and make great leftovers. Cooking them in the air fryer gives them extra crunch, almost feels indulgent.
Which brings me to these chicken thighs.
They are so darn good and so darn easy. A handful of spices and a little olive oil is all you need to add to the chicken. We have it sliced on a salad most times. It’s also good atop a bed of rice or paired with asparagus or any other vegetable of your choice.
Easy and delicious makes for a perfect RV dinner.
Begin by patting the thighs dry then placing on a plate and brushing with some olive oil.
Next, stir together the garlic powder, onion powder, salt, pepper, paprika and red pepper flakes.
Sprinkle half of the dry spice mixture on one side of the chicken, turn over and sprinkle the rest on the other side. Or, you could put the brushed chicken in a big ziploc bag, add the spices and give it a good shake.
Place them in the air fryer. Set the temperature to 375° and the timer to 10 minutes. We usually cook four thighs at a time, you might need to add a minute or two if you are cooking more.
When the timer dings, turn the thighs over and cook for 7-8 minutes more. It’s done when the chicken reaches 165°.

Air Fryer Chicken Thighs

- 1 pound boneless chicken thighs
- 1 Tablespoon olive oil
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper flakes
- Pat the chicken dry and place on plate, brush with olive oil and set aside.
- Stir together the garlic powder, paprika, onion powder, salt, pepper and red pepper flakes.
- Sprinkle 1/2 the spice mixture on one side of the chicken, turn chicken over and sprinkle the rest on the other side.
- Place in air fryer and cook at 375° for 10 minutes. When timer dings, turn chicken over and cook another 7-8 minutes.
Pairs well atop a salad, with rice or your favorite vegetable. Refrigerate any leftovers.
