You know how much I love blueberries. They are a close second to strawberries.
I’ve been on a blueberry kick lately and playing with our new air fryer. The air fryer will come in handy during our hot summers.
Blueberries were on an incredible sale recently so I stocked up. I made a bunch of blueberry jam in the Instant Pot, blueberry cake bars and ate them by the handful. I still had a pint and didn’t want to freeze them.
Mark played the happy taste tester to a T. We both liked it so much we made it again the next night. We had enough blueberries. The second time we made it our daughter in law was here for dinner. It is her most requested dessert now.
Luckily, I found an easy recipe online. It was the perfect size for the two of us.
This is made in ramekins which means it will cook faster and is already portion controlled. Our air fryer is too small to fit four ramekins so we made three and Mark ate the last one. Lucky guy but I got the last one the next night.
Start by preheating the air fryer to 300°.
Rinse the blueberries and lightly pat them dry. Gently stir blueberries with sugar and cornstarch. Set aside. You can add a little vanilla for if your blueberries are on the sour side.
Melt butter in another bowl. Add brown sugar, flour and oats.
Spray each ramekin with nonstick spray and add blueberries. Top the blueberries with the topping mixture, be sure not to pack down.
Place in air fryer basket and bake for 8-10 minutes until the topping is golden brown. Pull the basket out and let them sit for 3-5 minutes to finish cooking.
Service as it is or top with vanilla ice cream.
