I was a mission-oriented shopper this morning at the grocery store. Mark loves yellow cake and chocolate frosting this for his birthday cake. This has been his request for 35 birthdays.
Right next to the yellow cake was a lemon cake mix box. Lemon cake mix. How had I missed this? You all know how I love cake mix cookies. They are quick and easy to make and only make three dozen. Cake mix cookies are perfect for cooking in the motorhome.
I couldn’t wait to get home and make cookies with the lemon cake mix.
Boy, did they deliver.
Preheat the oven to 350°. Melt the butter in a microwave safe bowl. This means one less dish to wash in my house.
Stir in the cake mix then add the beaten egg and whatever extract you are using. If you really want the lemon zing, you could swap lemon juice for the extract.
Add the chocolate chips and stir. Scoop and place on a parchment paper lined cookie sheet.
Bake for 8-10 minutes. If you’re cooking in a microconvection oven, the cookie sheet might be too long to turn freely while baking. If so, turn the cookie sheet at 4 minutes. Bake until the edges are just a tiny bit golden.
Remove from oven and let them stay on the cookie sheet for 5-7 minutes while they finish baking. Cool completely.
Summery Lemon Cake Mix Cookies
- One Lemon Cake Mix
- 1/2 cup butter, melted
- 1 egg, beaten
- 1/2 teaspoon almond or vanilla extract
- 1 cup white chocolate chips
Melt butter in a microwave safe bowl. Stir in cake mix. Stir in beaten egg and extract. Add chocolate chips and stir.
Spoon and roll cookie dough into small balls, place on cookie sheet. Bake in a preheated 350-degree oven for 8-10 minutes. Remove from oven and let finish cooking on cookie sheet for 5-7 more minutes.
Try not to eat them all in one sitting. Store in a tightly covered container.
