I’m one of those weirdos that likes breakfast for dinner. Or breakfast for lunch and of course breakfast for breakfast. One of the fun things we did when our boys were little was silver dollar pancakes for dinner. Silver dollar sized so they didn’t need to use silverware. It was a fun time to pick up the little pancake with their little hands. Oh, I miss those days.
One of my favorite breakfast for dinner things to make is spinach and eggs. I think the fancy word is frittata. Well, it’s not really a frittata but I like saying that word because it makes sound more fancy. It’s fast, easy, full of good nutrients, and RV friendly. What could be better!
I make these one at a time mainly because Mark isn’t a huge fan of spinach. He’ll eat it but he definitely doesn’t like as much as I do with his eggs. Also, I make his with three eggs while I only two for me. Most times I use whatever cheese I have, but if I’m feeling really “chefy,” I’ll use mozzarella or fontina cheese. By all means, if your family likes it the same way, make it in a huge skillet and divide it your way. I can only dream of how easy that would be.
Mix your eggs with a little bit of milk, add salt and pepper to taste. Put a little oil in the pan and get it hot. We like garlic, so I’ll mince a small clove and saute it in the oil for a minute or two.
Add the spinach and cook. Mark doesn’t like his cooked very much at all. He says cooked spinach is too strong and overpowers every other flavor so I barely wilt his.
Spread the spinach evenly in the pan and pour the eggs in. I let the eggs cook while tilting the pan and using a rubber spatula to lift the eggs which allows the uncooked eggs to fall away to the pan and cook.
Cook until it’s almost set and flip it over and add your cheese. Here you can decide to leave it open or fold it over and make it an omelette. Your choice.
If we’re making this for breakfast we serve it with hash browns and toast, very restaurant like. If it’s for lunch or dinner, it’s usually paired with fruit.
