When our boys were young, we were knee-deep in sports. Baseball, football, soccer and volleyball sure kept us busy. During baseball season, sometimes our only day off was Sunday. I actually looked forward to the nights when we had two games in one night because that meant we could have another night of us all together.
We worked hard at eating together as much as we could, even if it was a grilled cheese sandwich and fruit before hustling off to practice or a game. When their schedules collided, my trusty Crock Pot was the superhero. Mark’s grandmother gave it to me for my 21st birthday and it’s never failed me.
Meatball sandwiches are by far the easiest game night Crock Pot meal. But, in close second are these Hawaiian Chicken Sandwiches. Setting it up takes less than two minutes then you can go about your day while the Crock Pot does all the work. On a busy day, what could be better?
This same premise works well when camping. I’m a big fan of the “set it and forget it” dinner prep when we are traveling. It’s so nice to come back from a day of fun to an amazing smelling RV. When we camp with a group, we often share meals. Most times we do our own meat and share sides. Other times we rotate nights; each RV cooks for everyone one night. That way, you only have to cook once. I really like it when we do this. Every night but one, we get to sit back and relax while someone else does the work. Kinda feels like you’re in a restaurant.
This is my go-to when we rotate nights. Like I said earlier, it’s a snap to put together but it is also just as easy to double for a crowd. I’ve even used two Crock Pots to feed everyone.
We like to brave the heat in the summer at the Colorado River for some water skiing. Our favorite place is Park Moabi because they have peninsula sites, some large enough for 10 RVs. And, each peninsula has its own beach. That means we only have to launch the boat once and can anchor it at our very own beach. We all get to camp together and after dinner we can relax on the beach with a nice campfire. Yes, we often do a campfire in June along the Colorado River in Arizona. I have to tell you, the temperature isn’t so bad once the sun sets.
I need to talk to Terri about going this summer, but for now, back to dinner.
Are you ready? It’s really hard.
Dump four to six frozen boneless, skinless chicken breasts in the Crock Pot.
Pour an entire jar of Sweet Baby Ray’s Hawaiian BBQ Sauce over the chicken.
Open a can of pineapple chunks and drain. Dump the drained pineapples on top of the sauce. Put the lid on and set to LOW if you have a lot of time or HIGH if you need it in a hurry.
Go about your day having fun. Go on a hike, jump the wake water skiing, do laundry if you must.
When you’re ready to eat, shred the chicken with two forks in the Crock Pot. Don’t be worried if it looks like way too much sauce as the chicken will absorb it while you shred. Give it a good stir.
Grab some slider buns or regular buns and pile it high. We like to continue the easy with a giant bagged salad. Viola, busy dinner or dinner for a crowd is done with just a few items to clean. Yeah!
This is also just as good served over rice. My guys like it on a bun so that’s how we make it 99% of the time. Any leftovers freeze well in an airtight container.
Recipe credit goes to Six Sisters’ Stuff. There is one modification, the BBQ sauce. For whatever reason, Target got rid of their Archer Farms line, insert big tears here. I really liked the tropical flavor of the pineapple, orange and mango. I’ve been on the hunt for a suitable replacement for a while and literally jumped for joy when I saw that my grocery store had Sweet Baby Ray’s Hawaiian style.
Hawaiian Chicken Sliders
Recipe Credit: Six Sisters’ Stuff
- 4-6 boneless, skinless chicken breasts, frozen
- 1 bottle Sweet Baby Ray’s Hawaiian BBQ Sauce
- 1 20 oz. can pineapple chunks, drained
Place frozen chicken breasts in Crock Pot. Pour BBQ sauce on top of chicken. Pour drained pineapple on the top.
Cook on HIGH for 2-3 hours or on LOW for 4-6 hours. Shred chicken with two forks while still in Crock Pot.
Pile on buns or serve over rice.
