I can’t be the only one that hoards holiday candy. I just can’t be. My grocery store always puts the holiday candy on sale 4 or 5 weeks before the holiday. I’m talking a screaming deal sale that when combined with my coupons, makes them super screaming deal. Who doesn’t like a bag of M&M’s for less than a dollar?! The only hard part of having 6 or 10 bags of Valentines/Easter/Halloween/Christmas is not eating them. My solution: double knot the bag and hide it in Mark’s office. Outta sight, outta mind.
Right now there are 6 bags of Easter M&M’s, one bag of Reese’s eggs and one bag of Cadbury mini eggs safely tucked away. There used to be four bags of the mini eggs but I made these blonde brownies twice. Both batches are going to our nearby Mayo Clinic where our daughter-in-law is a nurse. Those hard working superheros in scrubs need all the sweetness we can send them right now. I call them Quarantreats. Pretty catchy.
These blondies come together in minutes, it’ll take longer for the butter to melt than putting the whole thing together. And, drum-roll please, it’s an RV and kid friendly recipe!
Now that your mouth is watering, let’s get to it.
Begin by melting 3/4 cup butter, that’s 1 1/2 sticks. While that’s melting, sift the flour, salt and baking soda.
Mix the sugars and melted butter together until well blended.
Add the egg, egg yolk and vanilla and mix until creamy.
Slowly add the flour until it’s just mixed in, don’t beat too much.
Stir in two cups Cadbury mini eggs. I’ll do the math for you, it’s one and a half bags.
Spread into an 11×7 baking pan. Don’t have that size, no worries. A square pan will do just fine. I like to use parchment paper for brownies so I don’t have to wash the baking pan and so I can use my new brownie cutter. Some people call it a pizza cutter but brownies and baked bars are so much more fun to cut.
Bake at 325 for about 40 minutes until a toothpick comes out clean. You want the center to be set but not overdone. Let cool completely before cutting.
These are really sweet, I cut them much smaller than regular brownies.
Cadbury Blondies

2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg plus 1 egg yolk
2 cups milk chocolate mini eggs
Preheat oven to 325.
Melt butter. In a small bowl sift flour, baking soda and salt together. Cream melted butter and sugars.
Add eggs and vanilla and mix until creamy.
Slowly add in flour mixture.
Gently stir in Mini Eggs.
Spread batter into a greased 11×7 (or 8-inch or 9-inch square) baking dish.
Bake about 40 minutes or until a tooth pick is inserted in the center and comes out clean.
Store in a sealed container.
