The idea for today’s blog came to me somewhere over the Atlantic last year. Remember when we used to be able to travel with the only worry of coming back with an extra heavy suitcase? I’m so looking forward to that again.
One of my favorite parts of flying, aside from the occasional upgrade thanks to Mark flying a gazillion miles a year, are the biscoff cookies. I’m sure the flight attendants think I’m crazy when I get so excited for them. I even tell them that I’ll take any extras they might have. Believe it or not, most times I get a couple of packs slyly dropped on my tray as they walk by. As Charlie Sheen said once, “winning!”
As we flew back from our big anniversary trip to the UK I was thinking about things I could do with these delicious little rectangles. I thought about using them in a pie crust, crumbling them as an ice cream topping and of course since I’m a chocoholic, dipping them in chocolate.
I completely forgot about my obsession after we got home and everyday life took over. Fast forward to the pandemic when a simple trip to Costco was cause for getting dressed up. Even though I was only going for a few things, I would push my cart down every aisle. No touching, just looking. I don’t normally go down the snack aisle because I don’t need those temptations but these are not normal times, so meander I did. I was shocked, shocked I tell you, to find a 300-count box of these delicious little in-flight treats. Suddenly, my daydream from came back to me but, there was no way I could be trusted with that many cookies. I spent that afternoon thinking that these could make cute treats on a giant Christmas cookie tray.
Sadly, I don’t think I’ll get to make any giant cookie platters for parties this season. I am seriously bummed about that as I love making treats for people. I bought some baking boxes and will be a cookie fairy instead; it just won’t be the same.
These cookies, though! They are fabulous by themselves but dipping them in chocolate definitely takes them up a notch!
I found a 32-cookie sized box at Target and melting chocolate at the grocery store. I had red and green sprinkles at home so I was ready to go. Not quite, only green sprinkles at home. I looked at the cookies and decided they had enough of a red hue to them that only green sprinkles would be just fine.
I laid waxed paper on the counter and opened the box of cookies. You’ll want to work quickly before the chocolate firms up again.
Making these pretty treats are super easy. The hardest part is melting the chocolate, and it’s not even hard. You can melt them in the microwave or on the stove. To melt in the microwave, use a microwave safe container and melt at 50% power for 30 seconds. Stir. If not melted, do it again for 15 seconds at a time and stir until smooth. Don’t overdo it!
I chose the stove this time. It takes a little longer but I wanted the control. The last two times I’ve melted chocolate in the microwave I broke the chocolate and had a hard blob mess on my hands. I don’t have a double boiler so I improvised. I put some water in the smallest pot I have and placed a metal bowl over the top, making sure the bowl didn’t touch the water. With the flame between low and medium I constantly stirred the chocolate until it was nice and smooth. It was fast, just a couple of minutes.
Dip almost half of the cookie in the chocolate and lay it on the waxed paper. Don’t worry about any bubbles you may have in the chocolate, the sprinkles will hide them.
Shake sprinkles on the chocolate and let them hang out on the waxed paper until the chocolate is firm. You can speed up the process by placing them in the refrigerator.
You can make these days before your need them, there isn’t anything that will spoil. I store them in a shallow Tupperware container with waxed paper in between the layers of cookies. And, if you do have self control and decide to buy the Costco sized box, you can customize the decorations for use all year long. Red sprinkles for Valentine’s Day, green for St. Patrick’s Day, pastel colors for Easter, you get my drift. On second thought, maybe I will go back for the big box.
White Chocolate Dipped Biscoff Cookies
- One box Biscoff cookies
- Melting chocolates
- Sprinkles
- Begin by laying waxed paper on the counter or on a cookie sheet.
- Melt the chocolate according to package directions
- Dip half of the cookie in the chocolate and lay on waxed paper.
- Shake the sprinkles onto the chocolate while still soft.
- Leave on counter until chocolate is firm.
Store in a sealed container.
