I start this blog with a big OMG! Wow this is good. Like, where have you been all my life kinda good.
I am determined to get out of our current dinner rut so I’m spending some serious time scrolling through dinner ideas on Pinterest. It was there that a beautiful picture of small pieces of steak caught my eye. More like shouted at me, “Hey lady! Cook me, I’m delicious!” A quick scan of the ingredients and all I needed to buy was the meat. We had the always amazing garlic mashed potatoes leftover from the night before; steak and potatoes go together perfectly. This was working out perfectly.
Total time to make it was 15 minutes. We heated the potatoes while the steak was cooking so your total time may vary if you’re adding a time consuming side dish. Us, we like to keep it fast and simple.
Begin by cutting your steak into small cubes. Mark took a ruler out and measured the thickness, which was one inch. He decided on trying to get perfect squares so we had kind of one-inch cubes. However you cut it is up to you. I’m going to ask the butcher next time to see if he’ll dice them up for me. Fingers crossed.
While you’re cutting the meat, heat the olive oil over high heat. We use our cast iron skillet since it holds a good temperature so well and we can get it really hot. After we cut the meat we seasoned it with salt and pepper.
Next, place the steak bites in the skillet in a single layer. Cook 3-4 minutes, stirring occasionally until a nice golden brown. If you have a lot of meat, you may need to work in batches to get that good sear.
Add butter and garlic to the pan, cook for an additional 1-2 minutes while stirring the meat so it all gets a good coating of that buttery sauce.
You can be fancy and sprinkle with parsley, that would make it look very restaurant. Me, we like to get eating. I put the mashed potatoes on the plate and served the steak right on top, adding some extra sauce. Paired with a salad, it was a perfect dinner.
